Given the price of lobster it is an enormous shame that few if any US restaurants have the slightest clue how to prepare and serve lobster. Far from the subtle yielding delicacy experienced in France, US lobster is over-cooked tasteless rubber. The fact it's expensive rubber is hilarious.
