I'd be a bit worried about your A1C levels with all that sugar, and I also suspect most athletes supplement just to be sure of getting all the micronutrients that due to things like poor soil quality may be absent even in so-called "organic" produce. Vegans will need to supplement further with iron, iodine, and B12 to compensate for the deficiencies of these key micronutrients and hope for the best when it comes to omega-3 fatty acids. It used to be thought that the body would convert plant precursors but studies since 2014 have indicated the conversions usually give rise to omega-6 acids in far larger amounts, which is a problem because these tend to cause inflammation.
