One of my female Chinese friends had The Visit from her mother just before she turned 40. Mother insisted on spending the entire afternoon making siu mai. My friend, who had some months earlier expressed her decision to remain childless, pointed out that they were making hundreds of siu mai and that she didn't actually want any. "You freeze them," the mother insisted. "Frozen maybe not so good as fresh, but you freeze now and maybe change your mind later! Freeze, I say!"
